Huevos Rancheros: Recipe and playlist

Huevos rancheros for dinner? ‘You must be crazy Hogg, eggs are for breakfast’ I hear you cry. Well, these particular eggs are rich, spicy, definitely filling enough for dinner, and are quick and easy to put together and pop in the oven.

Huevos rancheros (with slightly overdone eggs. I’m not a runny yolk kinda gal)

As quickly as you’ve popped this playlist on, your eggs will probably be done

Ingredients – Serves two

4 large free range eggs

100g chorizo 

1 large onion

1 red chilli 

2 cloves of garlic

2 tsps hot paprika

1 tin of butterbeans 

1 jar chopped tomatoes 

1 large handful of spinach

Olive oil


Chop the onions

Finely chop the garlic and chili

Chop the chorizo into chunks

Fry the onions in a teaspoon of olive oil on a medium heat until soft

Add the chili, garlic, chorizo, and paprika, and fry for another couple of minutes

Add the spinach and butterbeans, fry for a minute until the spinach has wilted a little

Tip in the chopped tomatoes and simmer for 10 minutes

Transfer into a large baking dish and make four small wells for the eggs

Carefully crack the eggs into the wells, season, and pop into a pre-heated oven at 180 degrees Celsius for around 10 minutes, or until your eggs are how you like them! 

Dish into bowls and serve with fresh, crusty bread
